Preserve the Harvest

Imagine when all of the Tomatoes, Zucchinis and Cucumbers come into full harvest. In this fun filled class we take these abundant crops and turn them into something that will give you the flavour of sunshine in the middle of winter.
No ho-hum recipes here. We make easy Tomato Passata. Such simple ingredients turn into something not only delicious, but without preservatives, colours or additives. We will also make Mixed Pickled Veg jars which are perfect for rounding up all those small bits of produce lying around. It looks and tastes sensational and it’s easy.
Take Zucchinis for example. Now here’s a crop that can become a glut. I have 2 things to do with them that are utterly delicious and have you looking forward to the next crop of Zucchinis.
Last but not least is the Bread and Butter Cucumber Pickles. These were one of the most popular preserves when I had my farm shop at Apsley a few years ago. Wonderful with charcuterie, on cheese platters or in a sandwich.

The Post and Rail is a Cooking & Gardening School located at 7 Bill James Court Compton, on a 5 picturesque acre property. In a normal home kitchen designed to provide a relaxed and sociable, learning experience. Please allow an extra 10 mins travel time from the centre of Mount Gambier.
